The sunchoke (dwaeji-gamja) arrived in Korea as a Chinese import in the 18th Century, and was used in Korea as a survival crop and comforting herbal tea, prepared hot or cold and known locally for its sweetness and traditional role in everyday wellbeing. Sunchoke notes, reminiscent of burdock and hazelnut, unfold on a smooth texture, leaving a delightfully sweet impression on the palate.
